Wisconsin Center for Dairy Research
The Wisconsin Center for Dairy Research (CDR) is located within a licensed, operating dairy plant on the University of Wisconsin-Madison campus and is one of the premier dairy research centers in the United States. Building on Wisconsin's tradition as the "Dairy State," the center explores functional, flavor and physical properties of cheese/cheese products and other milk components used as ingredients and as finished products. CDR researches cheese make and dairy protein processing/separation procedures, use of dairy ingredients in foods, and technologies for product safety and quality.

Pizza Pub
Part of the success is due to Ed's secret seasoning in their pizza. A mystery to all, but ed and his son Shawn. Visit the attic lounge for casual dining with spectacular views of Lake Superior, Thursday through Saturday. Reserve the Attic Lounge for your next private party (maybe Ed will give you a hint to his secret seasoning).

Wells Brothers Pizza
In 1921, James and Dominic Wells opened Wells Brothers Restaurant on the corner of 22nd and Mead in Racine, Wisconsin. James operated the restaurant until his death in 1944, then sons Tony and Guy took over until 1999. During that period, the restaurant enjoyed many good times but also weathered some hardships. In 1967, two fires completely destroyed the inside of the restaurant. The brothers rebuilt it to its present appearance. Continuing the tradition of a family owned restaurant, third generation Wells — cousins Bill Rivers and Paula Wells-Huck — now operate the business.

At The Roman Candle, pizza is the means, not the end. They set out to recreate the kind of place they experienced in Europe during their wander years. A place where friends, families, and just plain anyone could go for great food, wonderful conversation, and maybe a drink or two.
