Executive Chef Juan Urbieta

The Bartolotta Restaurants are popular dining spots within the Milwaukee area offering a range of dining atmospheres from fine dining to casual eating. Opened by brothers Joe and Paul Bartolotta, Ristorante Bartolotta dal 1993 is the first of eleven restaurants under the Bartolotta umbrella. Its mastery in Italian cuisine has served its reputation well and is in part due to the flagship restaurant’s Executive Chef, Juan Urbieta. The mastermind behind the rotating menu that offers a culinary “Tour of Italy,” Urbieta has come a long way as a chef. Starting in Los Angeles as a 17-year-old dishwasher, Urbieta was eager to learn. He grasped every culinary opportunity that came his way. His passion, persistence, and drive to become a great Italian chef led him to learn from phenomenal mentors at acclaimed restaurants around the world, including Chef Paul Bartolotta at Restaurant Spiaggia in Chicago. Having started in LA, Urbieta has expanded and displayed his culinary knowledge in Colorado, Chicago, Italy and finally Milwaukee, Wisconsin, which he is now happy to call home.
