In 2009, Gilbert Wiliams and his partner purchased a cleaning mill in Lone Rock where their only plan was to clean crop seeds. Then one day a young employee decided to make a pancake mix out of crop seeds and Lonesome Stone Milling was born. Today, it is a small, organic-certified and locally sourced stone flour mill. They buy grain primarily from Driftless Area family farms. Stone-ground flour retains the bran and germ from the wheat kernel, which are the parts that are often removed when flour is ground with a roller mill, making them more nutritious and flavorful. Stone milled flours are whole grain and bring back a traditional way of creating food.
