Grilling Out With Wolf L&G Farms

Can you smell all the flavors in the air? Follow the fresh, local smells to Dodgeville, located in the heart of the gorgeous driftless area of the state. Dodgeville is home to Governor Dodge State Park, the perfect spot for a grill out with you, your friends, or family.

Jack Taylor, co-host of Discover Wisconsin, meets up with the Wolf Family, local pork producers and farmers of the area! They are part of the Wisconsin Pork Association which represents the state’s entire pork industry. This association is committed to the success of production of all sizes and types, and supports local farmers big and small.

Being members of the Wisconsin Pork Association allows local farms, like Wolf L&G Farms, to keep updated on important information about the pork industry. The association is dedicated to not only promoting pork products, but to protecting the industry as a whole so it can continue to flourish for generations to come.

He talks with co-owner Melissa Wolf of Wolf L&G Farms with the scenic backdrop of this beautiful state park. While she grills out a pork loin from her very own farm, her family plays a variety of yard activities amidst the green landscape. There is also hiking, canoeing, horseback riding, and swimming to keep you plenty busy as the juicy flavors cook.

With a delicious meal brought by Wisconsin’s own Wolf L&G Farms, Jack gets a taste of some of the finest pork in the entire state. This third generation hog and beef family farm takes pride in their sustainable practices and stewardship of the environment around them. In order to preserve the lakes surrounding the farm, nutrients are placed directly into the ground instead of on the surface of the soil. In addition, technology has been integrated to ensure the land is in the best possible condition.

Sustainable Farming in Wisconsin

Wolf L&G Farms, out of Lancaster, Wisconsin takes pride in putting a good product out there for local and worldwide consumers. The owners, Melissa and Shannon Wolf, explain how the use of technology has become an integral part in production to create the best product and do the best job possible. But what comes first, is their animals. The Wolf family spends lots of time with their animals and taking care of them. Animals come first in their industry. 

Did you know that pig farms across the US reduce their environmental impact by using 75% less land, 25% less water and 7% less energy than they did 50 years ago? It’s true and Wolf L&G Farms is a prime example of the Wisconsin Pork Association’s We Care program. This program works to ensure the health, safety and tremendous care for the pigs and their atmosphere are of the first priority.

Not only does the Wolf family care deeply about their animals, they use sustainable farming practices to grow their own crops! The crops are then processed and blended with more nutrients to give their pigs a balanced diet. Additionally, the pigs are kept in temperature controlled barns so in the hot summer months, they can stay cool and comfortable and in the cold Wisconsin winters, they can cozy up in the warmth. 

Discover Wisconsin’s co-host, Jack Taylor, got to learn about this incredible farms’ sustainable practices and daily operations, but got the special opportunity to settle in with his family for an authentic farm to table dining experience. On the menu was a Vietnamese pork table salad made with fresh ground pork. There’s nothing fresher or tastier than pork from this family farm.

Wisconsin Pork Association’s Pork Schoppe at the State Fair

Eric Paulsen, co-host of Discover Wisconsin, was able to experience the Wisconsin State Fair first hand and he gets wind of the one and only Pork Schoppe brought to you by the Wisconsin Pork Association! He talks with Keri Retallick, the executive vice president of the Wisconsin Pork Association. She, along with the other volunteers at the Pork Schoppe, are working to provide delicious, nutritious, pork products and use those funds to help with advocacy issues in the state. 

Now for the grillmasters who are dedicated to cooking up the best pork for visitors to try! When talking to Brock, the lead grillmaster, he shares a few secrets about how to cook the best pork to keep it juicy, moist, and wonderful on the taste buds! Pork is universal and is perfect to try different flavors on. No matter what, it always seems to turn out delicious. 

If you can’t get enough pork, while you’re at the fair, stop by Johnsonville’s Big Taste Grill. They’ve been on the road spreading their tasty pork products since 1995 and have raised over 4 million dollars for charities nationwide. They’re grillin’ up goodwill!
