Chef Kyle Sweet from Lake Arrowhead’s Pines Restaurant and Lounge, shared the details of his “Market Vinaigrette,” which works well as a dressing or marinade. Chef Kyle recommends that dried spices work best in the dressings, as they allow the vinegar and oil to mix and not separate so readily.
1 cup Balsamic Vinegar
2 cups blended oil (25% EVOO and 75% canola oil)
1 zucchini
1 yellow squash
1 red onion
1 oz chopped garlic
1 tomato
1 Tbsp each of dry oregano, basil and thyme
2 oz sugar or sugar substitute
Chop all vegetables evenly and sauté in oil until soft. Puree all cooked vegetables and seasonings in blender or food processor.
Add Oil and vinegar — Pulse
Season with salt and pepper to taste.
