For Rebecca Swanson, Lakewood has held many memories as her parents’ cabin near Paya Lake has been in their family for over 50 years. Lakewood became a perfect getaway for Rebecca and still holds a special place in her heart. This deep-rooted connection inspired Rebecca and Dave to plant the seeds of Braise North in this idyllic setting, marking the beginning of a culinary journey that celebrates both tradition and innovation.

Drawing inspiration from their original Braise Restaurant in Milwaukee, known for its farm-to-table ethos and gourmet delights, Dave Swanson brings his culinary prowess to Lakewood. He is a multiple James Beard nominee for “Best Chef in the Midwest,” demonstrating his expertise in creating dishes that are locally sourced and utilize seasonal ingredients. Dave’s passion for supporting local farms extends beyond his restaurants, as he shares his expertise through cooking classes, empowering others to embrace the beauty of locally sourced ingredients.

Having opened Braise North a little less than two years ago, the support for the location has been incredible. As Rebecca and Dave are split between the two locations, they rely heavily on the locals of Lakewood to maintain the facility. The staff is equally as patient about the Swanson’s mission and help make this such a special spot for locals and tourists alike. Housed within a historic building dating back to 1916, Braise North pays homage to its architectural heritage, preserving its iconic church-like interior. This creates a beautiful spot for excellent food, coffee, wine, and beer. The Swanson’s have crafted a culinary sanctuary, highlighting all the flavors of Wisconsin.
