Its mastery in Italian cuisine has served its reputation well and is in part due to the flagship restaurant’s Executive Chef, Juan Urbieta. <br /><br />The mastermind behind the rotating menu that offers a culinary “Tour of Italy,” Urbieta has come a long way as a chef. Starting in Los Angeles as a 17-year-old dishwasher, Urbieta was eager to learn. He grasped every culinary opportunity that came his way. His passion, persistence, and drive to become a great Italian chef led him to learn from phenomenal mentors at acclaimed restaurants around the world, including Chef Paul Bartolotta at Restaurant Spiaggia in Chicago.
